Pot\u00e9 po  chvilk\u00e1ch k\u00e1vu degustujte, ne\u017e se  dostanete a\u017e na v\u00e1mi  po\u017eadovanou chu\u0165.<\/p>\n<p>Mlet\u00ed<br \/>Spr\u00e1vn\u00fd stupe\u0148 mlet\u00ed je obzvl\u00e1\u0161t\u011b d\u016fle\u017eit\u00fd detail, proto\u017ee v\u00fdrazn\u011b ovliv\u0148uje chu\u0165. <\/p>\n<p>Zpravidla plat\u00ed:<br \/>  Jemn\u011b mlet\u00e1 k\u00e1va -&gt; v\u00edce extrakce -&gt; v\u00edce ho\u0159k\u00fdch l\u00e1tek \/ v\u00edce kyselin<br \/>  Hrub\u011b mlet\u00e1 k\u00e1va -&gt; m\u00e9n\u011b extrakce -&gt; m\u00e9n\u011b ho\u0159k\u00fdch l\u00e1tek\/ m\u00e9n\u011b aroma<\/p>\n<p>Krou\u017een\u00ed<br \/>  V p\u0159\u00edpad\u011b ru\u010dn\u00ed p\u0159\u00edpravy  je velmi d\u016fle\u017eit\u00e9 uv\u00e9st do procesu va\u0159en\u00ed krou\u017een\u00ed, proto\u017ee pouze takto p\u0159ich\u00e1z\u00ed v\u0161echna mlet\u00e1 k\u00e1va do styku s vodou.<\/p>\n<p><strong>Zkr\u00e1tka, kru\u017ete konvic\u00ed s vodou nad \u0161\u00e1lkem k\u00e1vy a opakujte si: poprv\u00e9, podruh\u00e9 a pot\u0159et\u00ed pro dokonalou chu\u0165 k\u00e1vy.<\/strong><\/p>\n<h5><strong>Teplota vody<\/strong><br \/><\/h5>\n<p>  P\u0159i ru\u010dn\u00ed p\u0159\u00edprav\u011b (nap\u0159. ru\u010dn\u00edho filtrov\u00e1n\u00ed k\u00e1vy) je d\u016fle\u017eit\u00e9, aby voda u\u017e neva\u0159ila, jinak se k\u00e1va p\u0159\u00edli\u0161 rychle extrahuje.<\/p>\n<p>Na druh\u00e9 stran\u011b, pokud je voda p\u0159\u00edli\u0161 studen\u00e1, zbytkov\u00e9 teplo ji\u017e nesta\u010d\u00ed k rozpu\u0161t\u011bn\u00ed po\u017eadovan\u00fdch aromatick\u00fdch l\u00e1tek, co\u017e zp\u016fsobuje nedostate\u010dnou extrakci k\u00e1vy.<br \/>  <strong>Ide\u00e1ln\u00ed teplota je v rozmez\u00ed 88-96 \u00b0 C.<\/strong><\/p>\n<h5><strong>Proces va\u0159en\u00ed k\u00e1vy<\/strong> <\/strong><\/h5>\n<p>Proces vybubl\u00e1n\u00ed<br \/>  \u010cerstv\u011b pra\u017een\u00e1 a mlet\u00e1 k\u00e1va st\u00e1le obsahuje hodn\u011b CO2, kter\u00fd mus\u00ed nejprve uniknout, aby byl zaji\u0161t\u011bn rovnom\u011brn\u00fd kontakt k\u00e1vy s vodou. To se d\u011bje p\u0159edev\u0161\u00edm kontaktem s horkou vodou. Kdy\u017e se setk\u00e1 k\u00e1va a hork\u00e1 voda, trv\u00e1 asi 30 sekund, ne\u017e unikne CO2. Mimochodem, CO2 je tak\u00e9 zodpov\u011bdn\u00e1 za n\u00e1dhernou cremu na espressu, proto\u017ee obsahuje plyny z k\u00e1vov\u00fdch olej\u016f.<\/p>\n<p>Extrakce<br \/>Po zalit\u00ed vodou doch\u00e1z\u00ed k  uvoln\u011bn\u00ed CO2, kter\u00e9 rozpou\u0161t\u00ed pevn\u00e9 l\u00e1tky nach\u00e1zej\u00edc\u00ed se v bu\u0148k\u00e1ch pra\u017een\u00fdch k\u00e1vov\u00fdch zrn. <\/p>\n<p>Tak\u017ee na v\u00fdslednou chu\u0165 k\u00e1vy maj\u00ed tyto t\u0159i faktory stupe\u0148 mlet\u00ed,  mno\u017estv\u00ed, teplota a kvalita vody obrovsk\u00fd vliv.<\/p>\n<p><img decoding=\"async\" src=\"https:\/\/caj-a-kava.cz\/obrazky\/uvod\/dobalouhovani\/kava.jpg\" alt=\"Prodej prav\u00e9 zrnkov\u00e9 k\u00e1vy.
